Sweet Potato Crumble with A Peanut Butter Twist 

Fall is here! Fall is here! My favorite thing to eat in the fall are sweet potatoes, they make me feel so warm, and they are just so delicious! This Crumble will give you that wonderful fall taste we all know and love with a twist. 


Ingredients
Filling
2 or 3 large sweet potatoes
6Tbs dairy free butter
11/2tsp pumpkin spice
1/4 cup pure cane sugar
1/2tsp sea salt

Crumble
2 cups old fashion oats
3Tbs pure cane sugar
1/4 tsp sea salt
2Tbs unbleached flour
1/2 cup creamy natural peanut butter
1tsp pure vanilla
4Tbs melted  dairy free butter

Directions
1. Preheat oven to 400 degrees F
2. In a 12x8 greased pan, combine the sweet potatoes, pumpkin spice, cane sugar, and salt. Toss together and add chunks of the butter to the top of the sweet potato mixture. Bake for 30-35min or until sweet potatoes are fork tender.
3. While your sweet potatoes are in the oven make you crumble. Add the old fashion oats, sugar, salt,  and flour,  to a medium sized bowl. Mix. Add in peanut butter, vanilla, melted butter and mix. Place crumble in fridge until sweet potatoes are done. 
4. Once done add the crumble on top of the sweet potatoes and place back into the overnight for another 20min. Or until crumble is golden brown. Serve warm with your favorite dairy free vanilla ice cream.
