Garden Veggie Tofu Cream Cheese 

Super easy homemade cream cheese that will be delicious on any bagel or bread. Customize this cream cheese with any flavors you like! Jalapeno cheddar, garlic chive, tomato basil. The choices go on and on! 



Ingredients
1/2 block firm tofu (drained)
1/4 cup oil of choice (coconut oil)
2Tbs seasoned rice vinegar
1tsp garlic powder
1tsp onion powder
1tsp seas salt
juice 1/2 lemon
1/2tsp chopped garlic
1/2 cup shredded carrots
1/4 cup chopped parsley
3Tbs chopped green onion

Directions 
1. In a food processor or blender combine tofu, oil, vinegar, garlic powder, onion powder, salt, lemon juice, and chopped garlic. Blend until completely smooth, it may take a little while for the mixture to come together. It should be pretty thick.
2. Once blended add to a small bowl and mix in the shredded carrots, chopped parsley, and chopped green onion. Refrigerate for a few hours or preferably over night. Enjoy just like you would cream cheese.
