Sushi Inspired Buddha Plate 

Just like you are at the sushi bar, this colorful and tasty plate will have you coming back for more! Packed with nutrition and flavor this is a must for your next lunch. 


Ingredients

Cooked brown rice
1Tbs seasoned rice vinegar
1 can chickpeas
2Tbs vegan mayo
1Tbs sriracha
Shredded cucumber
Shredded carrots
Avocado
Cilantro
Green onion

Directions
1. Cook brown rice according to package, after finished add seasoned rice vinegar and mix. While rice is cooking drain chickpeas, and smash with a fork until most chickpeas are not whole. Add mayo and sriracha to smashed chickpeas and mix.
2. Prepare cucumber, carrots, avocado, cilantro, and green onion. Place all ingredients in a plate or bowl. Best when you mix everything together after you plate it. Serve with soy sauce and enjoy!
