Super Easy Burrito Bake

This delicious but also easy meal is your next go to dinner, if you love burritos this is for you! Add what you want to make it perfect for you and your family!


Ingredients
8 whole wheat medium tortillas
1 can fat free retried beans
2 cups cooked Spanish rice of choice
2 cups veggie grounds seasoned with your choice of  taco seasoning
1 cup dairy free cheese
1/2 cup pickled jalapeƱos (optional)

Directions
1. Preheat oven to 400 degrees F. In a 13x8in greased pan line your tortillas side by side letting them come up on the sides of the pan.
2. Spread the refined beans on the bottom layer, add your cooked Spanish rice (If you do not have a recipe for Spanish rice you can find one on my Summer Chick’n Taco Recipe), and seasoned veggies grounds. Sprinkle with dairy free cheese and layer the jalapeƱos on top.
3. Cook for 20-25min on 400 degrees and broil at the end for 3min until the top is golden brown. Top with you favorite toppings like avocado, lettuce, cilantro, salsa, and dairy free sour cream!
