Funfetti Waffles 

When life gives you sprinkles, you make waffles! Crispy on the outside and soft and fluffy on the inside. Is there anything else I need to say?! 


Ingredients
2 cups unbleached flour
4Tbs baking powder
1/4tsp sea salt
1Tbs pure cane sugar
1 3/4cup milk alternative (I used cashew)
1Tbs rice vinegar or apple cider vinegar
1/2 cup unsweetened apple sauce
1/2tsp pure vanilla
1/2 cup oil of choice
1/3 cup of vegan friendly sprinkles (Who am I kidding? Add as many as you please!)

Directions
1. Preheat waffle maker to medium high heat.
2. In a bowl combine all dry ingredients and whisk together. Combine milk alternative and and vinegar and set aside for about 5 min so milk can begin to curdle.
3. Add milk and vinegar mixture, and all other wet ingredients into the dry ingredients and whisk just until combined. Do not over mix. Fold in sprinkles.
4. If your waffle maker is not non stick spray with oil and add 1/3 cup of batter to middle of waffle maker. All waffle makers are different so cook until your waffle maker signals it’s done. Check to make sure the outside is golden brown and the middle is cooked through. I like to cook mine a little bit over the time my waffle maker tells me to.
5. Server with more sprinkles on top! (Duh) and enjoy!
