Super Simple Mixed Berry Breakfast Bars 

Warm and satisfyingly delicious breakfast bars with a crunchy oat topping. Serve with your favorite smoothie or maybe a cup of tea. However you enjoy these bars you won’t be disappointed! 

 

Ingredients 
Crust and topping: 
2 flax eggs (2Tbs milled flax seeds and 4Tbs water set aside until thick) 
1 cup old fashion oats 
1 cup oat flour (blended oats until powder)
1/3 cup pure maple syrup 
1/2 tsp cinnamon 
Dash of salt 

Directions
  1. Preheat oven to 350 degrees F. In a small bowl combine flax mill and water (flax eggs) and set aside to thicken.
  2. Mix together old fashion oats, oat flour, maple syrup, cinnamon, and salt. Take out 1/2 cup of oat mixture and set aside for topping. Add in flax eggs to remaining mixture and mix until fully combine. Press bottom crust into an 8X8in greased pan and bake for 15 min. In the mean time cook your mixed berry jam. (Recipe below)
  3. After bottom crust is cooked add mixed berry jam on top spread evenly. Crumble reserved 1/2 cup of oat topping on top of jam. 
  4. Put bars back into the oven for another 25 min. When done let cool completely before cutting. Store in fridge for up 5 days. 

Chai Mixed Berry Jam: 
1 cup frozen mixed berries 
1Tbs chia seed 
2Tbs pure maple syrup 
1/2 lemon squeezed 

Directions

  1. Add all ingredients into an medium sauce pan and cook on medium/high heat for 15-20 min. Until fruit is fully cooked and it starts to turn into a jam like texture. Smash fruit with fork until thick and no large fruit chunks are left.
