Chickpea Salad Sandwich 

There’s something nostalgic about that tuna salad or chicken salad sandwich your mom or dad would put into your lunch bag. This sandwich has the same home feel to it. Still packed with protein, you can pair this on toasted wheat bread or eat it with your favorite crackers.

 

Ingredients 
2 16oz cans of chickpeas drained 
2 stalks celery 
2Tbs chopped green onion 
1/4 cup vegan mayo 
1Tbs yellow mustard 
2tsp agave syrup 
Salt and pepper to taste 

Directions
  1. In a large bowl with a fork smash chickpeas until they are mashed to your liking. you do not want full sized chickpeas left. Chop the celery and green onion and add to the bowl. 
  2. Add in mayo, mustard, yellow mustard, agave syrup, and salt and pepper. Mix and serve however you like. 

This recipe is versatile, how ever you used to like your chicken or tuna salad you can use the chickpeas in replacement of the other protein. Add what you want or don’t add something you will not like. I hope you enjoy!
