Cheap and Easy Pulled BBQ Jackfruit
Summer is coming and that means bbq! Just because you are eating a plant based diet doesn’t mean you have to miss out on that bbq flavor. This jackfruit recipe is cheap and will not disappoint. I purchase my canned jackfruit from my local asian market for around two dollars a can.
Ingredients
2 10oz cans of green/young jackfruit in water
Water for simmering
1tsp onion powder
1tsp garlic powder
1tsp paprika
Salt and pepper to taste
1/2 cup bbq sauce of choice
Directions
- Preheat oven to 400 degrees F.
- Drain cans of jackfruit and place into a large skillet. Cover right above the jackfruit with fresh water and bring to a small boil on medium heat. Cover and let simmer on medium/low heat for 20min.
- After 20min drain, and use a fork to smash jack fruit (should resemble pulled meat). Place onto a greased cooking sheet. Add garlic powder, onion powder, salt, paprika, and pepper. Toss seasonings, and place in oven for 25 min.
- After 25 min add bbq sauce onto jackfruit and mix until completely coated. spread into an even layer. Bake for another 15min. Serve on a toasted bun with pickles and onions or along side your favorite bbq side dishes.
