Cheap and Easy Pulled BBQ Jackfruit 

Summer is coming and that means bbq! Just because you are eating a plant based diet doesn’t mean you have to miss out on that bbq flavor. This jackfruit recipe is cheap and will not disappoint. I purchase my canned jackfruit from my local asian market for around two dollars a can. 



Ingredients 
2 10oz cans of green/young jackfruit in water 
Water for simmering 
1tsp onion powder 
1tsp garlic powder 
1tsp paprika 
Salt and pepper to taste
1/2 cup bbq sauce of choice 

Directions

  1. Preheat oven to 400 degrees F. 
  2. Drain cans of jackfruit and place into a large skillet. Cover right above the jackfruit with fresh water and bring to a small boil on medium heat. Cover and let simmer on medium/low heat for 20min. 
  3. After 20min drain, and use a fork to smash jack fruit (should resemble pulled meat). Place onto a greased cooking sheet. Add garlic powder, onion powder, salt, paprika, and pepper. Toss seasonings, and place in oven for 25 min. 
  4. After 25 min add bbq sauce onto jackfruit and mix until completely coated. spread into an even layer.  Bake for another 15min. Serve on a toasted bun with pickles and onions or along side your favorite bbq side dishes.
