My Go To Salad

I know.. I know what you are going to say "Salad? The typical vegan meal, filled with a bunch of  leaves that I have to drown in dressing to make it taste good." Was I right? Well with my salad recipe there is nothing typical about it! Packed with veggies, a delicious dressing, and a spicy kick. This salads will not only satisfy you, but will have you coming back for more! Buffalo tofu serves about 4.



Buffalo Tofu Salad with Vegan Ranch

Ranch Dressing

Ingredients
1/2cup unsweetened dairy free yogurt
1/4 cup vegan mayo
2Tbs chopped parsley
2Tbs chopped chives
1/2 lemon squeezed
1/2tsp onion powder
1/2 garlic powder
salt to taste
Directions
Whisk all ingredients together. If dressing is a little thick thin it out with some dairy free milk or water. Longer it sits, the better the taste. I always make the dressing ahead of time. Store left over dressing in covered container for later use. Can store in fridge for about a week. 
Baked Buffalo Tofu
Ingredients
1 block super firm or extra firm tofu cubed
1Tbs olive oil
1/2tsp garlic powder
1/2tsp onion powder
1tsp paprika
2tsp old bay seasoning (optional) 
salt and pepper to taste
1Tbs corn starch

Buffalo Sauce

Ingredients
1/2 cup hot sauce (I use Franks Red Hot) 
1Tbs dairy free butter
Directions 
1. Pre heat oven to 400 degrees. Use either super firm or extra firm tofu, what ever you can find in your grocery store. I usually us super firm tofu. Dry tofu block with paper towel, and cut into 1inch cubes. Place tofu cubes into medium bowl and add in olive oil, garlic powder, onion powder, salt, pepper, and cornstarch. Toss until completely coated.
2. Place on parchment paper lined baking sheet and bake for 20-25 minutes until golden brown. Will become more crispy when cooled.
3. While tofu is cooling turn oven temp up to 425 degrees and in a small sauce pan over medium low heat add in hot sauce and butter. Let butter melt and toss in baked tofu. Place tofu back onto baking sheet and cook for another 10min. Tofu is ready to serve at this point.

Bed of massaged kale
Bed of Romaine
Roasted sweet corn
Shredded Carrots
Chopped celery
Baked cauliflower
This salad can be paired with any choice of salad mix or greens. Add in your favorite veggies and customize it to your liking!
