Healthy Black Bean Brownies 

Everyone loves brownies, but not every loves the feeling you get after eating a whole pan of them. Now you can enjoy your brownies and eat them too. Black beans and the word brownie might sound weird, but trust me. This protein packed dessert is too good to be true. 


Ingredient 
1 cup melted dairy free chocolate chips 
1 can black beans drained 
2/3 cup oat flour (old fashioned oats blended until powder) 
3Tbs peanut butter or nut butter of choice 
1/2 cup pure maple syrup 
2 flax or chia eggs (2Tbs milled flax seeds or chia seeds combined with 2Tbs water set aside until thick) 
1tsp vanilla 
1/4 tsp salt 
1tsp baking soda 
Extra chocolate chips for top of brownies (optional) 

Directions 

  1. Pre heat oven to 350 degrees F. 
  2. In the microwave melt chocolate chips using 15 second intervals. Mixing in between each time (It took my microwave 3 15sec intervals to melt the chocolate chips completely.) 
  3. Combine all the ingredients in a blender and blend until completely smooth. Line an 8x8 baking pan with parchment paper (recommended) or lightly grease. Smooth brownie batter in pan. If you are going to top with more chocolate chips add them to the top before placing in the oven. Bake for 30 min or until brownies are set. Let cool for 15min and serve!
