Broccoli and Cheese Soup with Kale 

A healthier version of your favorite soup! Packed with veggies and flavor, this is a must make for your next family dinner. Around 225 calories per 1 1/2 cup serving. Serves 6-7. 

 

Ingredients
1 large head of cauliflower
1 Large carrot peeled and chopped 
1 medium onion diced 
3 cups dairy alternative (I used cashew milk) 
3 cups vegetable broth 
2 cups cheese alternative (I used Daiya Mozzarella) 
2Tbs nutritional yeast
3Tbs flour 
4 cups frozen broccoli 
2 cups chopped kale
2Tbs onion powder
2Tbs garlic powder 
Salt and pepper to taste 

Directions

  1. In a large pot over medium heat sauté onions, cauliflower, and carrot until onions are translucent and cauliflower and carrots are slightly tender. 
  2. Add in dairy alternative and vegetable broth and boil for 10-15 min or until cauliflower is fully tender. Purée contents in a blender or food processor (be careful contents will be HOT) 
  3. Add purée cauliflower mix back into pot over medium heat. Add in flour and nutritional yeast and whisk so there are not lumps and everything is smooth. Bring to a slight boil. Add in broccoli, kale, onion powder, garlic powder, salt, and pepper. 
  4. Turn heat down to a simmer and cover pot with a lid. Cook on low for 30-40min. Taste after it’s done cooking add in more seasoning to taste. Enjoy!
