Not Your Cheese Nacho Cheese

Nacho cheese made with potatoes and carrots? You heard me right! Do you love cheese but cheese doesn't love you? This recipe is perfect for you! Only around 250 calories for entire thing! 

Ingredients
1 large potato chopped and peeled
1 large carrot chopped and peeled
1/2 cup milk alternative (I used cashew milk)
1tsp apple cider vinegar
2 Tbs jalapeno juice
6 slices pickled jalapenos
2Tbs nutritional yeast
1tsp onion powder
1tsp garlic powder
1/2tsp salt
Directions
1. In a small sauce pan boil water and add in potato and carrot for about 6minutes or until both are fork tender. Drain.
2. In a food processor or blender add in cooked potato, carrot, milk alternative, apple cider vinegar, jalapeno juice, sliced jalapenos, nutritional yeast, onion powder, garlic powder, and salt. Blend until completely smooth. Add more salt to taste. If you want you can heat it up on the stove on medium heat for a few minutes. Or serve right after its blended. Enjoy!
