Garlic Chive Cashew Cheese 

Spreadable and delicious! No cows were harmed in the making of this cheese. You will be the center of attention when you bring this to your next get together! 



Ingredients 
2 cups soaked raw cashews 
3/4 cup water
1Tbs minced garlic 
1/2tsp garlic powder 
2Tbs nutritional yeast
2Tbs olive oil 
1tsp salt (more to taste) 
Juice of 1 lemon 
1/4 cup chopped chives or green onions for topping 

Directions

  1. Soak cashews in very hot water (not quite boiling) for 1 hour. Drain and rinse cashews. 
  2. In a food processor or blender add in cashews, water, garlic, garlic powder, nutritional yeast, olive oil, salt, and lemon juice. Blend until completely smooth, scrapping down the sides in between. 
  3. Place a strainer inside a bowl and lay a double layer of cheese cloth (or a thin kitchen towel) inside the strainer. Once cheese mixture is smooth scrap into cheese cloth and gather the ends of the cloth and twist making the cheese into a “disk” shape. Secure with a rubber band. 
  4. Place in fridge for 12 hours or over night. Cheese will become more flavorful after it has set over night or for 12 hours. Place cheese onto serving platter, and coat with green onions. You might have to reshape after transferring. Enjoy with your favorite crackers or veggies!
