Blueberry Oat Bars

Served warm with a little spread of dairy free butter. This breakfast will have you satisfied and ready for the day! Serving size: 2 bars (makes about 9 bars)

 
Ingredients
2 cups oat flour (2 cups old fashion oats pulsed into powder)
1 cup milk alternative
1/3 cup brown sugar/coconut sugar  
1tsp pure vanilla
2Tbs flax mill
1/2tsp salt
2tsp baking powder
1 cup frozen blueberries
1/4 cup sliced almonds (optional)
 
Directions
1. Preheat oven to 375 degrees F
2. In a food processor or blender pulse 2 cups of old fashion oats until mostly powder. In medium sized mixing bowl combine milk alternative, brown sugar, vanilla, and flax mill and set aside. In a separate small bowl whisk together oat flour, salt, and baking powder. Combine oat flour mixture and milk alternative mixture. Add in blueberries and almonds, mix everything together.
3. In a greased 8x8 pan pour in oat bar mixture and bake for 25-30min or until edges are brown and middle is set. Server warm and enjoy!
