No guilt chocolate chip banana bread 

The great taste of banana bread without having all the guilt. You will love this recipe! 

 

Ingredients 
1 3/4 cup unbleached flour 
1tsp baking soda 
1tsp cinnamon 
1/2tsp salt 
2 large ripe bananas mashed  
1tsp vanilla pure extract 
1/2 cup pure maple syrup
1/3 cup melted coconut oil 
1/4 cup milk alternative (I used cashew milk) 
2 flax eggs (2Tbl flax meal and 4Tbs cold water combined, let sit for 2min) or 1/4 cup unsweetened apple sauce 
1/2 cup semi sweet dairy free chocolate chips 

Directions
  1. Preheat oven to 325 degrees F. Grease and flour a loaf pan and set aside. In a medium mixing bowl combine flour, baking soda, cinnamon, and salt. Whisk together and sit aside. 
  2. In a large bowl mash two large bananas until most of the banana chunks are gone. Add in vanilla, maple syrup, melted coconut oil, mill alternative, and flax egg or apple sauce. Combine well, then add in flour mixture to banana mixture and whisk together, do not over mix dough. Stir in chocolate chips. 
  3. Place banana bread dough into prepared loaf pan and bake in the oven for 55-60min or until you can stick a toothpick in the middle and it comes out clean (will have melted chocolate on it). Let cool completely and take it out of the loaf pan. Slice and serve!
