Vegan Strawberry Cheese Cake
Decadent and oh so delicious. Spoil yourself with this creamy strawberry cheesecake, you won’t regret any of it!
Ingredients
Crust
2 packages finely ground plain graham crackers
3Tbs sugar
4Tbs dairy free butter
Dash of salt
3 8oz containers vegan cream cheese
2tsp pure vanilla extract
1/2 lemon squeezed
Dash of salt
2/3 cup organic cane sugar
Topping
Topping
1/2 lemon squeezed
1 16oz bag frozen strawberries
1/3 cup sugar
Directions
1. Preheat oven to 350 degrees. Crush graham crackers into a fine dust. In a medium bowl melt butter for crust. Add crushed graham crackers, sugar, and salt into melted butter. Mix and press crust into a pan of choice. Bake in oven for 5-7 min until crust feels set. Let cool completely.
3. In a small sauce pan Over medium low heat add strawberries, lemon, and sugar and cook until thickened and reduced by half. Store in fridge for later.
4. Once crust is cool and filling is chilled for about 30min. Add filling into crust, cover and chill over night or until set around 3-4 hours. Filling is soft and creamy when set. Top with chilled strawberry topping and enjoy!
