Spinach And Artichoke Dip

Bubbly hot and so comforting! This spinach dip will be the star of your next party, serve with toasted baguette, your favorite veggies, even some vegan "meat balls" would be delicious dipped in this!


Ingredients
2Tbs dairy free butter
1 medium onion diced
2Tbs minced garlic
1tsp onion powder
1tsp garlic powder
1 12oz jar marinated artichoke hearts
2 8oz containers of vegan cream cheese
2Tbs nutritional yeast
1/4 cup vegan parmesan (optional)
salt and pepper to taste

Directions
1. Preheat oven to 400 degrees
2. In a skillet on medium heat add butter and onions. Sauté onions until translucent. After onions are cooked add in spinach 2 1/2 cups at a time until all spinach is wilted. Add garlic, onion powder, and garlic powder take off heat and set aside.
3. Roughly chop artichoke hearts and add into a medium mixing bowl. Add vegan cream cheese, nutritional yeast, and spinach mixture to bowl with artichokes hearts in it. Mix well, salt and pepper to taste.  
4. Grease a deep pan, I used an 8x8in pan. Add in spinach artichoke dip and sprinkle with vegan parmesan (if using). Bake in the oven for 20 minutes or until hot and bubbly. Serve fresh out of the oven!
