Pumpkin scones with apple cider cream cheese glaze

Pumpkin lover are you ready for this? Delicious scones for the holidays, that you and your family will love! 


Ingredients
Scones
2 3/4 cup flour 
1/3 cup sugar
1Tbs baking powder 
3/4tsp salt 
1/2 tsp all spice 
1 tsp cinnamon 
1/2 tsp fresh ground ginger or 1/4 tsp ground ginger 
1/2 cup cold vegan butter 
1/2 can pumpkin purée 
1/2 cup soy milk 
2 flax eggs (3tbs flax mill/4tbs water sets aside before adding to milk and pumpkin) 
Glaze
18oz container vegan cream cheese 
2cups powder sugar 
1tsp vanilla 
Dash of salt 
3Tbs apple cider 

Directions
1. Preheat oven to 400.
2. Mix dry ingredients, add cold butter in pieces. Use fork to cut butter into flour mixture until it makes a sandy looking flour mixtures.
3. In a separate bowl mix pumpkin, soy milk, and flax eggs and mix. Add wet mixture to dry mixture and mix with hands or wooden spoon just until combined. Do not over work. Will be a sticky dough. Shape into disk. Cover and place in the freezer for 30 min.
4. In the mean time make the glaze. Combine all ingredients and mix with a hand mixer or whisk until smooth.
5. Take dough out of freezer, flour a clean surface and place dough on counter. Shape dough into a rectangle, about 2 inches thick. Do not over work dough. Cut into triangles and place on pan, do not grease pan.  Cook for 12-16 min. Until middle of scones are cooked and outside is slightly crispy.
6. After scones are baked, let cool. Put glaze in zip lock bag, snip the corner or bag and drizzle glaze over cooled scones. Or just dip scones into glaze. Serve and enjoy!
