Mushroom Scampi
If you love the taste of shrimp scampi with out having to eat shrimp, you'll love this! Tender Mushrooms, buttery, garlicy sauce. The family will enjoy this!
Ingredients
2tbs dairy free butter
2tbs olive oil
4 cloves garlic chopped
1/2 cup vegetable broth
Salt to taste
Pepper to taste
1/4 tsp crushed red pepper flakes
16 ounce package of mushrooms diced
I package cooked pasta ( I use veggie pasta)
1/2 lemon
Directions
In a large sauté pan, sauté mushrooms until tender. Add garlic, salt, pepper, and crushed red pepper. After garlic and mushrooms are sautéed add vegetable broth. Cook pasta as directed on package. Add cooked pasta in pan with scampi sauce and mushrooms cook on medium heat until sauce is slightly reduced. Squeeze half a lemon over the top of pasta and serve!
