Breakfast Tofu Scramble

Yes that's right, you can make tofu taste like eggs. Surprising, but so delicious! Pair with a cold glass of orange juice and butter wheat toast and you are starting your day off right! "Meat" and potatoes is my favorite combination, you can add anything you would like! 


Ingredients
1 block extra firm tofu
3tbs nutritional yeast
1tsp onion powder
1tsp garlic powder
dash of turmeric for egg color
salt and pepper to taste
1tbs olive oil
cooked cubed potatoes
chopped vegan deli meat
chopped green onion

Directions
1. Prep potatoes by dicing them and cooking them to your liking. Cut vegan deli meat into strips. Set aside.
2. Drain block of tofu. Using a cheese cloth or 3 paper towels layered over each other. Place tofu into cheese cloth or paper towels and squeeze excess water from tofu. Crumble tofu and set aside.
3. In a medium skillet heat up olive oil over medium high heat. Add tofu, nutritional yeast, onion powder, garlic powder, turmeric, salt, and pepper. When tofu starts to brown, about 5 min. Add in potatoes and "Deli meat". Cook together for a couple of minutes. Add extra salt and pepper to taste and serve!
